For the 7am soto time, pick up would be breteen 5am and 6: 30 am, this depends on the sunrise that shifts during the year since Mexico eliminated the change of time for summer or winter time.

For the 7am slot you'll be depending on the return of the sunrise hot air ballon ride of the 5am, start would be between 7:30 - 8:00am.
